I was offered a Chinon 7000 for 75 total. Is that a good deal? Could you give me some insight on which you would suggest I get, the Chinon 7000 or the Canon PS-1000?

Chinon 7000 is for super 8mm. Not a bad deal.
Check the spec of Chinon here:

For Canon PS-1000:
http://super8data.com/database/projectors_list/projectors_canon/canon_cineprojector_ps1000.htm
This projector uses 80w compared with Chinon which is 100w or 150w. So Chinon will be brighter obviously.
