What do I do when you have a group screening and you show multiple films and you have to rewind the film but don't want to because then there will be a really long break between each showing? How do you solve this problem?

Grant, dont rewind your films during the show. It will only kill the enjoyment.
Certainly you need at least one empty reel as a take up reel (which I beleive you have it one now, right?). Then show the first film. After the first screening, use the first (now) empty reel as the take up reel for the secod film.
Second film will be empty and use it as the take up reel for the third film, and etc, etc

I use two projectors and alternate back and forth between them. Sometimes I rewind one machine while the other is projecting, sometimes (especially when the film on screen is short) I bring a spare takeup reel and set that one aside to be rewound later.
Especially when I'm watching a feature, this arrangement works well because it keeps the show going. The downside is needing to thread up the empty machine in the dark, but a small flashlight (...or a cellphone in a pinch) is a big help.
