And also, are these available from anyone?

The GS1200 came with a 3 bladed shutter. Both a 2 bladed shutter and a switchable 2/3 bladed one are sold by Wittner in Germany.

Steve Osborne sells two bladers from his Reel Image company in Ohio. I bought one and had Leon Norris install it. It really increases the light output on the screen.

I also converted my 3 bladed GS1200 to 2 blades and was amazed at the increase in screen brightness. It was comparable to going from the low lamp setting to the high lamp setting. In other words, the brightness with the 2 bladed shutter at low lamp setting was about the same as the brightness of the 3 bladed shutter at high lamp setting. Unfortunately the 2 bladed shutter I purchased from Steve Osborne looked like it had been cut from aluminum sheet metal with a pair of hand metal cutters - a very crude shutter indeed, and not at all what I was expecting, namely a precision machined part. I had to hand file it to get it from hitting the housing. But at least it worked! Out of sight, out of mind, I guess.

Thanks for mentioning that Paul. I was planning on ordering one from Steve for my GS1200, but I don't want it like you described. I'll mention what you said. Maybe they are better quality now.
