They do exist!
This capacitor should do just fine electrically:
Illinois Capacitor Company
The problem with it is it's not a direct mechanical drop in, so you would have to find a way to mount and connect it.
This happens a lot. In the years since they made these machines many components have become smaller (and better) and the old components just aren't available anymore.

I tried to check also the Italian website, and the 3,15 uF is not available...
I contacted also the COMAR here in Italy and they told me that this value is now no more used and if I need I can order from them! It seemed a good news, but...
the only problem is that I should buy the minimum lot of 2,000 pieces

In other words they can still get everything they need to make the part, but in order to make enough money to pay for setting up production again they have to sell 2,000 pieces.
If you want an exact part, you'll need new old stock. Sometimes E-bay is good for things like this.
The part I found will work, it would just require you to get creative to put it in place.

400v Comar ones of the same rating still exist in Europe and should be ok to use as a replacement in this application.
