All film projectors seem to have a 'blower' type fan attached to the motor. Is this for cooling the bulb or the motor or both?

It cools the bulb, it cools the motor and in a sound projector it cools the power semiconductor devices in the amplifier circuitry.
The motor really doesn't need cooling that badly, but just like a lot of devices the cooler it runs the longer it will last.

As Steve says, the fan helps to keep the whole of the interior of a projector from overheating, even more so with a sound projector with its delicate components.

The bulb is the major source of heat in any projector. They are pretty inefficient: if you are pouring 150W of electric power into an incandescant you get about 135W of heat. It would be great if you were trying to build a heater instead of a lamp!
Without that little furnace in there you could probably get away without a fan.
-Still the same, with a sound machine I'd want to have some kind of fan in there even if just for confidence.
Why do you want to remove the fan, noise?
