Hi Liam,
With Super-8 for such a purpose, you'd want a compact camera with a deep wide-angle lens attachment, not an easy combo in S-8. Braun Nizo made a fine wide-angle lens which fit their 4000-and 6000-series cameras; the lens was by Schneider, so excellent glass. Can be gotten, but not cheap, and you'd have to pair it with one of their good cameras.
As mentioned, a GoPro, or an Iphone 6 Plus or above with the "Filmic Pro" software, a "Beastgrip" handle and a wide-angle lens attached, should do the job. Also a gimbal such as the "Zuiyun Smooth 3" might help out.
