There are many remastered old movies now on DVD or BluRay. Are they taken from negative or positive print for this remastering copies?

A camera negative is preferable over all other material, but these are sometimes missing, damaged or destroyed. At the other end of the scale is a release print, sometimes borrowed from a collector. Discs made from release prints are easy to notice by the cue marks.
There were other prints made during the production process, how much of this material is kept after release varies. It's all done with a digital intermediate these days.

It also depends on which elements still exist. Some releases such as the recent Kino SUNRISE and NOSFERATU for instance are transferred from more than one source.
