Picked up a GS800 but the odd thing is the sound is low on pre-recorded reels but is fine when I play something I recorded on my GS1200. Any ideas? I've fiddled with all the switches.

I wonder if maybe the prints you recorded on the GS-1200 are stereo, so sound on both stripes, and the pre-recorded reels are monaural, so sound on track 1's stripe only.
If your GS-800 has good track 2 playback, but track one is low, a stereo print would still have sound through track 2, but a monaural print would be closer to silent because track 1 has issues.
Here's something you can try if you have a head demagnetizer. Turn on the GS-800's sound and turn the volume up. Switch between tracks and slowly bring the demagnetizer closer to the head for each track. If you get more increasing hum for track 2 than track 1, then you know. You could even use track select to switch between them with the same field for a better comparison.
If you don't have a demagnetizer, a cellphone actually makes a useable magnetic field for this test. I used mine as a flashlight to examine the head once and the projector audio reacted to it!
